6 bone-in chicken thighs
5 tsps. olive oil, divided
1/2 tsp salt, divided
1/2 tsp. pepper, divided
6 T Dijon mustard
1/4 cup shallots, minced
1 tsp. hot sauce
1 2/2 lbs. small new potatoes, halved
1 lb. fresh or frozen green beans

Directions:
Directions:
Preheat oven to 425.
Place potatoes and green beans in a single layer on a 18 X 13 baking pan. Drizzle with 5 tsps. olive oil and season with half of the salt and pepper. In a small bowl, combine mustard, shallots, hot sauce and remaining 1 tsp. olive oil. Season the chicken thighs with remaining salt and pepper, and spread this mixture over the thighs, coating both sides. Nestle the coated chicken onto the sheet pan with vegetables. Bake until the chicken is cooked through, about 30 minutes.
