6 c. Rice Chex cereal, crushed (6 c. before crushed)
1 c. melted butter
1 c. brown sugar
1 tsp. vanilla
1/2 c. nuts
1 c. coconut
1/2 gal. vanilla ice cream
1 can cherry pie filling (or your choice)
Directions:
Directions:
Mix together first 6 ingredients and pack 3/4 in bottom of 9x13-inch pan. Spread softened ice cream on top. Sprinkle balance of crust mixture on top. Serve with a spoonful of pie filing.
I think 1/2 cup brown sugar is plenty sweet.
