1.5- 2 lbs chicken cut into small pieces
Salt/pepper/garlic to taste
1TBSP Sesame oil/ olive oil for cooking chicken

2 TBSP Sesame Oil
1TBSP Dried Onion (This is a substitution for real onion)
1 1/2 TBSP fresh Garlic
1.5 TSP ginger
6 cups cold cooked rice (needs to be cold)
4 TBSP Soy Sauce
4Tsp Chinese Chili Oil (use less for less spicy rice)
2 -3 Tsp fish sauce
2 eggs

Directions:
Directions:
Cut up chicken. Season with salt, pepper, and garlic. Cook in hot frying pan in oil until done.

In large pan heat up garlic, onion, ginger in sesame oil. Once hot add rice and all other spices. Cook until rice is hot. Add finished chicken to rice.

In a separate pan, scramble eggs on low heat. Cook until done and cut unto very small pieces. Add cooked eggs to rice
