1 1/2 lbs small yukon gold potatoes, cut into bite size pieces
1 small onion or 1/2 large onion, cut into chunks
2 Tablespoons olive oil
3/4 teaspoon dried thyme (I added Rosemary as well)
1/2 teaspoon garlic powder
Salt and ground pepper to taste
12 oz fully cooked smoked turkey sausage sliced into rounds (or plate based meat)
2 - 3 bell peppers cored and cut into bite size chunks (red, orange and yellow)
3 Tablespoons minced parsley

Spray a rimmed 18x13 baking sheet with spray

In a large mixing bowl toss potatoes and onions with olive oil, thyme, garlic powder & season lightly with salt and pepper

Pour and spread into an even layer onto prepared baking dish. Rpast in preheated oven 20 minutes

Removed baking sheet from oven, if no oil on baking sheet add another Tablespoon. Add sliced sausage and bell peppers and toss everything.

Return to oven and continue to roast until peppers are tender and sausage has heated through, about 15 minutes. Sprinkle with parsley and serve warm.
