1/2 baguette, sliced thin
3 tablespoons extra-virgin olive oil
1 garlic clove, peeled
2 ounces goat cheese (or substitute burrata)
12-20 cherries, pitted and sliced
6-8 fresh mint leaves (cut in a chiffonade)
2 tablespoons honey
flaky sea salt such as Maldon

Directions:
Directions:
Preheat oven to medium heat.
Brush one side of each bread slice with olive oil. Place sliced bread in oven and toast until both slides are golden brown around the edges.

Remove toasted bread from the oven and rub the olive oil side of the toasted bread with the raw garlic clove.

Top each piece of garlic-rubbed crostini with a little goat cheese (about 1-2 teaspoons). Arrange cherry slices on top of the goat cheese. Sprinkle with fresh mint and drizzle with honey. Finish with a pinch of flakey sea salt and serve immediately.
