4 strips bacon, diced
2 T bacon fat
1/2 red bell pepper, chopped
2 T milk
1 small onion, chopped
2 cups fresh or frozen corn
2 T minced parsley
salt and pepper to taste

Directions:
Directions:
1. Saute bacon until crisp. Remove. Pour off all but 2 T fat.
2. Over medium heat, saute onion until barely soft. Stir in corn and red pepper. Stirring frequently, cook until just tender 3-4 minutes.
3. Stir in remaining ingredients and cook through.
