3/4 cup butter, softened
3/4 cup sugar
1 egg
1 1/2 teaspoons vanilla extract
2 1/4 cups of flour, sifted
1/2 teaspoon salt
6 ounces semi-sweet chocolate chips

Chocolate coating:

6 ounces semi-sweet chocolate chips
2 tablespoons butter

1. Line cookies sheets with parchment and set aside. Pre-heat oven to 350°

In a large bowl, beat better, sugar, egg and vanilla until well-mixed, about 2 minutes.

2. In a separate bowl, sift flour and salt. Blend flour into butter mixture. Stir in chocolate chips by hand.

3. On a lightly floured surface, shape dough, by the heaping teaspoonful, into logs about 2 inches long and 1/2 inch wide. Place on parchment-lined cookes sheets and bake until cookies are set and lightly browned on bottom edge, 12 to 15 minutes. (The cookies will look quite pale on the top side.). Remove pans from oven and place on wire racks allowing cookies to cool completely on cookie sheet.

4. Prepare coating: Melt chocolate and butter in micro stirring every 15-25 seconds until smooth. If mixture seems too thick for dipping, add a little melted butter and stir until smooth. Dip one end of each cookie log into chocolate scraping the excess from the back of the cookies on the side of the bowl. Decorate with sprinkles. Place on waxed paper until set. Store covered in single layer.
