Ingredients: 1 lb. ground beef 1 white onion, diced 2 Tbsp. Favorite taco seasoning 1/2 cup water 1 can black beans, drained and rinsed 1 can drained sweet corn 1/4 cup salsa olive oil cooking spray 8 large burrito sized tortillas 1 1/2 lb. Colby jack and cheddar cheeses combined 2 green onions sliced

Directions:1) Brown ground beef &onion. Then drain excess fat & juice. 2) Add taco seasoning and 1/2 cup of water.. 3) Add black beans, corn, and salsa to the beef mixture and mix well. 4) spray 1 baking sheet with cooking spray and line it on the edges with 6 tortillas (they will over lap and hang off the edges of the pan), place another tortilla in the center making sure that the total surface area of the pan is covered. 5) Dump hamburger mixture over the center of the tortillas and spread evenly across the pan of tortillas. Spread cheese evenly over the mixture and sprinkle with green onion. 6) Place the last tortilla in the center and fold the edges of the other tortillas to fully cover the mixture. 7) Spray the back of another baking sheet and place over the sheet pan quesadilla. 8) Bake in a preheated oven at 425ºF for 20 minutes. Then remove the pan on top and broil for about 2-3 minutes or until the top gets crispy.
Top with slice avocados, chopped tomatoes, sour cream and salsa or just plain. Leftovers are great the next day for lunch or dinner. |
