2# beef - filet or sirloin

6 Tbs butter

1 cup chopped onion

1 clove garlic – chopped

½ # sliced mushrooms

3Tbs flour

2 tea meat extract

1 Tbs ketchup

10 1/2 oz. beef bouillon

¼ cup dry white wine

¼ tea dry dill

1 ½ cup sour cream

Salt & pepper to taste

2 tea parsley

Trim meat – cut crosswise into 1/2 inch strips. Melt 2 Tbs butter in large skillet. Add beef, in batches, and sear on all sides. Remove and set aside.

In remaining butter brown onion garlic, and mushrooms until onion is golden - about 5 minutes. Remove and set aside.

Add flour, meat extract, ketchup, and salt and pepper. Stir until smooth. Gradually add broth – bring to a boil – stirring - reduced heat and simmer for 5 minutes. Add wine, dill, and sour cream - stirring until combined. Add back beef and mushroom mixture. Simmer until beef and sauce are hot.

Serve with rice or noodles - Top with parsley.
