¼ cup flour
1 cup sugar
¼ t freshly ground nutmeg
5 cups blueberries- picked over
2 t finely grated lemon rind
2 Tablespoons unsalted butter cut into bits
On pie crust

Milk and sugar glaze-
2 Tablespoon cold milk
1 Tablespoon superfine sugar

Directions:

Blend together flour, sugar, and nutmeg in a large mixing bowl. Add the blueberries and lemon rind. Fold the berries through the sugar mixture. Pile into a 9 inch pie pan. Dot with butter. Cover the filling with pie dough - vent. for the glaze, brush the top of the pie with the cold milk and sprinkle with sugar. Bake in preheated oven 425º for 20 minutes, reduce the oven temp to 350º and continue baking for about 35 minutes or until the top crust is golden. Transfer to a cooling rack.
