Flour Water Salt egg noodle recipe, with diced sage mixed in with dry ingredients
1/2 Cup Butter
4 Cloves Garlic
1/4 Cup flour
1 Cup Milk
3/4 cup heavy cream
1/2 Cup Walnut Halves
1/2 Cup Cooked Peas
1/2 Cup shredded Parmesan
Salt
White Pepper

Directions:
1. Make the egg pasta from FWS, but mix in diced sage with the dry ingredients.
2. Wrap pasta dough tightly in seran wrap and set aside until ready to roll out.
3. Bring a pot of water to boil, heavily salted.
4. Melt butter over medium high heat. Cook while stirring until butter is properly browned, 5-7 minutes.
5. Add minced garlic cloves and stir rapidly for 30 seconds.
6. Add flour into garlic butter mixture, stirring continuously with a silicon whisk. Cook for 60 seconds.
7. Slowly pour milk into roux while stirring continuously with whisk. Bring mixture to a light boil until thick.
8. Remove from heat. Stir in peas, walnuts, chopped sage, and salt and white pepper. Cover with lid and set aside for 30 minutes.
9. Cut pasta dough into 1/4s. Flatten to 1/3" thick. Roll through pasta roller from 1 to 5 on the KitchenAid attachment. Cut with fettuccine cutter attachment.
10. Drop pasta into boiling water and stir continuously to avoid sticking. Cook for 3-4 minutes only. Reserve 1/2 Cup of pasta water.
11. Drain pasta from water and stir into prepared sauce. Return to the heat for another 4 minutes, stirring in the reserves pasta water.
12. Serve by twirling in center of plate, topping with parmesan and fried sage leaves. Serve with seared scallops.
