1/2 cup (1 stick) unsalted butter, at room temperature
1/2 cup powdered sugar, plus more for dusting
1/2 tsp almond extract
1/4 tsp salt
1 egg at room temperature
1 1/4 cups flour
1/2 cup almond flour

Directions:
Directions:
Preheat oven to 350º.

Combine butter and powdered sugar with a mixer until light and fluffy. Add the almond extract, salt and egg. Beat again for 1 minute. Add the flour and almond flour and combine well.

Scoop 1 Tbsp sized mounds and roll in your hands . Place onto a baking sheet.
Bake 15-20 minutes or until set but not brown. Cool slightly on the tray, about 10 minutes. Dust with powdered sugar before removing to a rack to cool completely.

Makes about 18 cookies.
