1 lb. dried black beans
2 qts. water
1/3 c. olive oil
6 cloves garlic
2 onions, peeled and chopped
6 sweet chili peppers, chopped
2 t. salt
1/4 t. pepper
1/4 t. oregano
2 T. sugar
2 bay leaves
1/4 t. cumin
2 T. dry wine
1 1/2 T. vinegar

Garnishes:
chopped onions or green onions
chopped tomatoes
chopped cilantro
sour cream

Directions:
Directions:
Wash beans and soak overnight in water. Make sure water covered the beans by a couple of inches. Drain beans, rinse, put in pot with 2 quarts water. Bring to a rapid boil. Reduce heat to moderate. Cover and cook 45 minutes.

In large skillet, heat olive oil and saute onions and peppers for 10 minutes, stirring occasionally. Add garlic and cook another minute. Add 1 c. of cooked black beans. Mash all thoroughly in skillet. Put mashed mixture into bean pot and add spices. Cover and boil 1 hour over moderate heat. Add vinegar and wine; cover, cook over low heat 1 hour. Uncover and cook until sauce thickens as you like. Serve over rice. Garnish with chopped onions, tomatoes, cilantro and sour cream.

I called these "spooky beans" when my kids were little and would serve them on Halloween. They couldn't go out for trick or treating until they finished their spooky beans.
