Salt Poultry Seasoning
Pepper Cumin
Paprika Worcestshire Sauce
Large Onion Bullion Cube
1/2 Cup Red Wine

Directions:
Directions:
Coat doves in flour, salt, pepper and paprika and brown. Chop large onion and add 1/2 Cup of wine and spices, and Worcestshire, and 1 bullion cube dissolved in 1 Cup of hot water. Cover and simmer 3-1/2 to 4 hours.

Check the birds often....if they over cook they can become like mush and fall off the bone, if under cooked they will be too touch. Not difficult but your dinner hour has to be a little flexible. Great with wild race and game salad. Recipes in this book.
