Ingredients:
Ingredients:
3lbs of boneless skinless chicken thighs, thawed
1 can Campbell's Cream of Chicken Soup
1 can Campbell's Cream of Mushroom Soup
2 ½ cups of milk
1 stick of Land O Lakes Butter (melted)
3 cups Pepperidge Farm Herb Seasoned Breadcrumbs (in the blue bag)

Directions:
Directions:
Place 3lbs of thawed boneless, skinless chicken thighs in Instapot. Add enough water to cover chicken to cook (approximately 8-12 cups).
Place lid and weight on instapot, select the 'Manual' setting and set cook timer to 20 minutes.
While your chicken is cooking, preheat oven to 375º
In a medium sized pot, add both cans of soup and all of milk, whisk together over medium heat until gently warmed through.
After chicken has finished cooking in instapot, allow steam to release from instapot and place chicken into a large mixing bowl to be shredded.
You can shred the chicken by hand, but a timesaving tip I will offer is to use your handheld mixer instead, it is much faster!
Shred chicken to desired consistency.
Mix soup and shredded chicken together and spread in an even layer in the bottom of a 9x13 baking dish.
In a separate bowl, mix melted butter and breadcrumbs. Stir until breadcrumbs are well coated in butter and sprinkle in an even layer as a topping for the casserole.
Bake uncovered for 20-30 minutes until golden brown on top and bubbling on the sides.
Allow to cool for 10mins before serving.
Enjoy!!

Personal Notes:
As a child, every Sunday after church, my family and I would go up to my Mamaw and Papaw's house to enjoy a meal with them. My Mama and Aunt Jenny would help Mamaw in the kitchen, we were all at her beckon call! It seemed Mamaw always had a special job for each of us kids to pitch in as well. My cousins were always giddy about getting to cut out the biscuits and of course the best part...eating the leftover biscuit dough! The part of this memory that is most special to me, is I recall getting to help shred the chicken and stir the soup for the chicken casserole. I felt so important getting to watching over the soup and keep it stirred to make sure it didn't scorch on the bottom! Ha ha!
Oh the little moments in life...they often become the most treasured. The aroma of this casserole baking takes me right back through the years, and in my mind, I can close my eyes and be standing in my Mamaw's kitchen with a smile radiating all the way from inside my heart!!! So, from Mamaw's kitchen to your's...enjoy the taste of a memory.
