Slug of oil
1 red onion, chopped
1 clove garlic, crushed
3 medium courgettes cut into chunks
2 cans green lentils, drained
2 tsp whole grain mustard
1 lemon, zest and juice
3 tbsp flat leaf parsley, chopped
Seasoning

Directions:
Directions:
Heat the oil and gently fry the onion and garlic until soft. Add the courgettes and fry for 2-3 minutes. Add the lentils, mustard, lemon juice and zest and the parsley. Heat through and simmer for 3-4 minutes.
Season and serve with spaghetti
