Slug of sunflower oil
8 curry leaves
1 tsp cumin seeds
1 tsp black mustard seeds
1 red onion, chopped
Thumb size piece of ginger, grated
3 cloves garlic, crushed
1 red chilli, chopped
2 tsp black peppercorns, crushed
1 tin coconut milk
4 large carrots cut into big chunks
½ lemon
Coriander leaves

Directions:
Directions:
Heat the oil and fry the curry leaves for a few seconds then add the seeds and stir until they start popping. Add the onion and fry gently till golden. Add the garlic, chilli, ginger, pepper and carrots and fry for another 5 minutes.
Add the coconut milk and a touch of water and cook until the sauce has thickened and the carrots are soft.
Add the lemon juice and sprinkle with coriander leaves.
