1 c pitted dates, preferably Medjool (about 5 ounces)
1/4 c packed light brown sugar
2 tbsp unsalted butter
1 c walnuts
2 tsp orange zest
1 tsp pure vanilla extract
Pinch fine salt
4 whole graham crackers, broken into pieces

Confectioners Sugar for rolling
Optional: Colored Sanding sugar for rolling
Optional: 1/8 tsp or a fresh grating of nutmeg

Directions:
Directions:
Put the dates, brown sugar and butter in a microwave-safe medium bowl and cover. Microwave on high in 1-minute increments, stirring in between, until the butter has melted.
Transfer the mixture to a food processor and pulse until smooth. Add the walnuts, orange zest, vanilla, salt and graham crackers and pulse until the mixture comes together into a stiff and slightly tacky ball. Scoop heaping teaspoonfuls of dough and roll them into balls.
Mix confectioners sugar with the nutmeg (if using). If desired, mix a little colored sanding sugar into the confectioners sugar.
Roll the balls in the confectioners sugar. Refrigerate the balls until firm, about 1 hour, before serving. Store in the refrigerator.
