2 cups (12 oz) butterscotch chips melted
2Tbsp. peanut butter
6 oz. Chinese or chow mein noodles
6 oz. cocktail peanuts

Directions:
Directions:
1. Melt the butterscotch in a double boiler over simmering water. Butterscotch does scorch easily so be careful not to burn it.

2. In a medium bowl combine melted butterscotch and peanut butter and mix well. Then add the chow mein noodles and peanuts mixing thoroughly. Drop by tablespoon full onto a sheet of waxed paper. Refrigerate until cool and set, about 20 minutes.

Note: These cookies keep their crunch when stored in an airtight container. Best during cold weather as they tend to melt during warmer seasons.
