Ingredients: 4 medium sweet potatoes, scrubbed clean and dried 60 butter, melted 2 cloves garlic, crushed 1 tbsp fajita seasoning 1 lime, juice 4 tbsp sour cream 4 tbsp guacamole 1 can black beans, drained 150g cherry tomatoes, quartered ½ small red onion, finely diced Chives, a few, finely chopped ¼ x 25g pack coriander, roughly chopped

Directions:Preheat oven to 220º. Slice the potatoes into 3cm-thick rounds. In a large mixing bowl, combine the melted butter, garlic and fajita seasoning,½ tsp sea-salt flakes and some black pepper. Whisk to combine, then add the sweet potatoes and toss until coated.
Place the potato slices in an even layer on a large baking tray about 3cm apart. Keep any remaining butter mix. Bake potatoes for 25-30 minutes or until tender. Meanwhile, mix the lime juice into the sour cream, season and set aside.
Remove sweet potatoes from over and preheat the grill to a high heat. Using a potato masher, crush the potato slices lightly to gently break the surfaces. Use a pastry brush to apply the remaining spiced butter mixture. Grill for 3-5 minutes or until the edges are starting to catch.
Divide potato slices between 4 plates, top with a couple of spoonsful each of guacamole, black beans and cherry tomatoes. Sprinkle with red onion, then drizzle over the lime sour cream and the chives and coriander. Serve with lime wedges. |
