8oz potatoes, diced
8oz carrots, diced
8oz swede, diced
1 onion, sliced thinly
1 eating apple, diced
˝ oz butter
˝ pint vegetable stock
3 tsp worcester sauce
2 tsp fresh ginger, grated
4 tbsp peanut butter (crunchy or smooth)
1 can red kidney beans
salt and pepper

Directions:
Directions:
Melt the butter and gently sauté the potato, carrot, onion and swede for about 10 minutes. Add the grated ginger and continue to sauté for 3 minutes.
Blend the stock, peanut butter and worcester sauce together and pour over the vegetables. Cook until veg are tender. Add the kidney beans and apple and heat through. Season and serve on its own or with crusty bread or pile of greens
