4 c flour (can use 3 c white and 1 c whole wheat flour)
2 tsp sugar
2 tsp salt
1 Tbsp dry yeast
1 1/2 c cold water
1/2 c boiling water

Directions:
Directions:
Heat some water in a small pan to boiling. Measure 1/2 cup boiling water in a 2 cup measuring cup, add 1 1/2 cup cold water (this makes the perfect temperature for proofing yeast bread).
Mix all dry ingredients in a medium bowl. Mix in water with a spatula to make a rough dough. Cover, and allow to rest for 1 hour.
Heavily butter 2 medium glass oven proof bowls (about 1.5 quart size). Use 2 forks in the middle of the dough to separate and divide dough into the two prepared bowls. Do not cover. Let rest 30 minutes.
Preheat oven to 425º. Bake the loaves for 17 minutes, reduce heat to 375 and bake for 15 minutes more.
