1 15 oz can pumpkin
8 oz cream cheese
1 can sweetened condensed milk
Spices to taste: e.g. 1 tsp Cinnamon, 1/4 tsp each of Cloves, Ginger, and Nutmeg
8 oz whipping or heavy cream
2 Tbsp sugar
1/2 cup cold coffee
vanilla wafers (for outside)
Maria's cookies* or graham crackers (for inside layers)
whipping cream
butter
optional: splash of cinnamon Kahlua, Bailey's Irish cream, or Amaretto liqueur

*available at Walmart, Gamesa Marias Cookies

Directions:

Mix cream and 2 Tbsp sugar in a mixer until stiff peaks form.
In a separate bowl mix the pumpkin, cream cheese, sweetened condensed milk and spices.
Butter a glass serving bowl. Line the inside of the bowl with vanilla wafer
Layer with Marias cookies or graham crackers.
Brush with coffee (and liqueur if using)
Spread 1/2 of pumpkin mixture over top
Spread 1/2 of whipped cream over top
Repeat layers.
Sprinkle with nutmeg if desired.
