2 lbs purple potatoes, washed
1/4-1/3 cup olive oil
kosher salt
pepper

Directions:
Directions:
Place potatoes in pot and fill with cold water. Add Kosher salt.
Boil potatoes for 20-25 minutes, until cooked through and
tender. Drain and return to boiling pot. Add 1/4 cup olive oil, salt
and pepper and whip with a hand blender or immersion blender.
Continue to add olive oil as needed until potatoes are the
consitency of a lumpy mashed potato.
