1 Cup Oil
2 Cups Sugar
2 Eggs
1 Teaspoon Vanilla Extract
2 ½ Cups Flour
1 Teaspoon Salt
1 Teaspoons Baking Powder
1 Teaspoon Cinnamon
4 Cups Apple (peeled and cubed)
1 (12 oz.) Package Butterscotch Chips (can use all or 1/2)

Directions:
Directions:
Cream oil, sugar, eggs and vanilla. Combine flour, salt and baking powder. Add to creamed mixture, mix. Batter will be very heavy! Fold in apples, let stand in mixing bowl about 5 minutes, mix again. Pour into 9 x 13 x 2 pan. Sprinkle butterscotch chips and cinnamon evenly over top. DO NOT MIX! Bake at 350º for 50-60 minutes. Top with confectioner sugar when cool if desired.
