4 Lemons

2 C Sugar
1 C Water

Directions:
Remove peel of fruit in and then slice in narrow strips. You can remove pith but the boiling will remove the bitterness. After peeling cover with water and bring to boil for 15 min. Drain and rinse. Do this a minimum of 3 times. Then mix 1 cup water with 2 cups of sugar bring to a boil and stir until clear. Add peel and bring to boil reduce to simmer and cook for 45 minutes. Should be soft ball stage syrup.

Remove peel with slotted spoon, let drain and then put in bowl of sugar to coat and then on a rack to dry. 2-3 days. After drying may be kept in a baggie in refridge or freezer.
