6 Cups cubed potatoes
1 small onion diced very fine.
1 cup whole milk
2 Tablespoons butter
Salt and Pepper to taste
12 slices bacon, cooked crisp (reserve some of the bacon drippings)
Shredded Cojack Cheese
Green Onions, Diced Fine.

Directions:
Directions:
Cover potatoes, onion, salt, pepper, butter and a couple tablespoons of bacon drippings with water (barely covering the potatoes) and simmer until the potatoes are tender.
Do not drain water from potatoes.
Pour milk over potatoes and adjust salt and pepper as needed.
To thicken broth, put a few tablespoons of bacon drippings and one tablespoon butter a small skillet. Melt and then whisk in flour until well combined. Gradually add this mixture to the soup, stirring constantly.
Serve topped with Bacon, Cheese and Green Onions.
