1 lb. breakfast sausage
12 large eggs
1/2 cup milk
2 cups frozen hashbrowns
1 cup shredded cheddar cheese
1 bell pepper (optional)
1 small onion chopped
salt to taste
pepper to taste
1/4 cup shredded cheese to put on top of casserole

Directions:
Directions:
1. Preheat oven to 350º.
2. Brown the breakfast sausage until in crumbles. Set aside.
3. Whisk together eggs and milk. Season with salt and pepper.
4. Add eggs, cooked sausage, cheese, pepper, onion, and frozen hashbrowns to baking pan. Stir ingredients well.
5. Sprinkle shredded cheddar on top.
6. If cooking immediately, place uncovered in the oven at 350º for 30 to 40 minutes, until edges begin to brown and the egg is cooked through in the center.
7. If making ahead, cover tightly and refrigerate up to 24 hours. Remove cover before baking.
