3 Slices Bacon
5 Pound Pork Shoulder Roast
1 1/2 Tablespoons Alaea Red Hawaiian Coarse Sea Salt
5 Peeled Garlic Cloves (optional, i don't use these when I make it)

Directions:
Directions:
Line the bottom of a slow cooker with the bacon slices
Trim excess fat from roast
Weigh the pork roast. use 3/4 tsp. red sea salt for every pound of meat. 1 1/2 Tablespoons if your roast is 5 pounds.
If using garlic, cut slits in roast and tuck garlic in slits.
Salt the pork all over and place salted pork on top of bacon in crockpot, skin side up
Cook on low for 12-14 hours. DO NOT ADD ANY LIQUID
When pork is done, remove from crockpot and chunk, or shred it with two forks.
Check the meat for seasoning and if it needs more seasoning add some of the liquid from the crockpot.
Do not just shred the meat in the crockpot with the liquid, it will be too salty.
