1 head of Escarole rinsed

1 cup of chicken stock (vegetable broth used during lent)

2 Tbsp. of extra virgin olive oil

3 cloves of garlic minced (or more to your taste)

3 cans of Cannellini beans

2 bay leaves and salt and pepper to taste

Directions:
Directions:
Cook garlic in oil until slightly golden, add escarole, broth and beans. Then add your spices. Let cook for 30 minutes and serve with grated locatelli romano cheese and crusty Italian bread.
