8 cans of least expensive plain beets
Pour juice from three of the cans of beets in a pot, Discard the rest.
2 to 3 Tbsps. Cornstarch
2 to 3 Tbsps. Ketchup
1 cup apple cider vinegar
1 cup sugar or Splenda
2 Tbsps. olive oil
generous tablespoon full of vanilla flavoring
1 tsp. ground cloves
½ tsp. salt
1 Purple onion or sweet onion like vedalia

Directions:
Directions:
Put the juice from three cans of plain beets into a pot, and throw away the rest. Wisk in cornstarch, ketchup, apple cider vinegar, sugar or Splenda, olive oil, vanilla flavoring, cloves, salt. Heat and stir mixture, it will thicken.

Let the mixture come to a gentle boil.

Cut purple onion into thin slices cut in half, add beats to liquid, stirring gently with a wooden spoon. Keep refrigerated in a covered container, it will last 3 to 4 weeks.
