2/3 C. sugar
1/4 C. flour
1/4 tsp. salt
2 C. milk, scalded
3 eggs
1 tsp. vanilla
1 tsp. butter

Directions:
Directions:
Cook in double boiler. Mix dry ingredients. Scald milk and mix gradually with dry ingredients. Separate 3 eggs. Beat egg yolks and add a small amount of hot mixture to eggs stirring to combine. Slowly add egg mixture to hot mixture stirring constantly so as not to cook the egg yolks in the hot mixture. Cook until thickened stirring constantly. Add vanilla and butter to finish. Pour into baked pie shell. Top with meringue made with the reserved egg whites and brown in 400 degree oven for about 10 minutes, or until meringue is nicely browned..

VARIATIONS

Banana: 2 to 3 bananas sliced in rounds and alternated with filling.

Butterscotch: Substitute 1 C. brown sugar for white sugar. Increase butter to 3 Tbs

Caramel: Caramelize 1/4 c.sugar.Gradually add scalded milk to sugar then to dry ingredients

Chocolate: Increase sugar to 1 c. add 1/4 c. cocoa.

Coconut: Add 1 c. coconut

Pineapple: Add 1/2 c. drained crushed pineapple.
