1 pound skin-on salmon
½ cup soy sauce
1 Tbsp. mirin
2 tsp. sugar
1 Tbsp. vegetable oil (optional)

Directions:
Directions:
Mix the soy sauce, mirin, and sugar together until sugar dissolves well. Portion the salmon into four portions, and place in a bowl just large enough to coat the salmon with the sauce. Refrigerate the salmon in the marinade for 30 minutes to one hour.
arrange your oven rack so it is close to the broiler. Preheat cast-iron skillet from high heat on the stove until very hot. Remove the salmon from the marinade, emperors both sides of the salmon with oil. Place the salmon skin side up in the skillet and transfer the pan to the broiler. Cook one to two minutes, check for doneness, if the salmon isn't done, flip and cook one more minute.
