4 yellow squash, sliced
1 or 2 Zucchini, sliced
add an extra egg or milk with two large zucchinis
½ cup Onion chopped
½ cup water
¼ Cup butter, melted
2 Tbsp. butter, sliced
35 Ritz crackers, crushed and divided
1 cup cheddar, shredded and divided
2 eggs
¾ cup milk

Directions:
Preheat oven 400ºF, Cook sliced squash and zucchini in frying pan with a half cup of water, let steam until soft, and then put aside. Pour eggs and milk in the squash after the squash has been drained in a frying pan and put it into a large bowl add to this make sure 1/4 cup butter melted. Add half the Ritz and Cheddar that has been crushed and mixed. Add one tablespoon salt and pepper to taste, pour the mixture into casserole dish sprinkle rest of the Ritz/cheddar mixture on top then two tablespoons of butter one more cut into little pieces and dollop on top of casserole. Bake 25 to 30 minutes. Enjoy.½
