2 sticks unsalted butter
4 oz. semisweet chocolate, chopped
2 cups sugar
4 large eggs
11/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 tsp salt

Directions:
Directions:
1. Preheat the oven to 350ºF. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on two sides. Coat the foil with cooking spray. Combine the butter and chocolate in a large saucepan and cook over low heat, stirring with a rubber spatula, until melted. Remove from heat and let cool slightly.

2. Add the sugar, and eggs to the chocolate mixture and mix with a whisk until smooth. Add the flour, cocoa powder, and salt and whisk until combined.

3. Spread the batter in the pan with the rubber spatula. Bake until a toothpick inserted into the center of the brownies comes out clean, 30-35 minutes. Remove the pan from the oven with mitts, put the pan on a rack, and let the brownies cool completely.

4. Lift the brownies out of the pan using the overhanging foil, then peel off the foil. cut the brownies into squares, and enjoy with ice cream.



Variations:
1. Add 1/4 cup butterscotch chips to the batter.
2. Add 1/3 cup chopped maraschino cherries to batter.
3. Swirl 1/2 cup jam (any flavor) into the batter.
4. Add 1/2 cup M & M's to batter.
5. Add 3/4 cup chocolate chips to the batter.
6. Add 1/2 cup toffee bits to the batter.
7. Add 1/2 tsp ancho chile powder to the batter.
8. Top the brownies with mini marshmallows during the last 10 minutes of baking.
