Ingredients: Dressing: 2 ½ ounces blue cheese (use good quality - I used Rogue Creamery) 3 tablespoons buttermilk 3 tablespoons sour cream 2 tablespoons mayonnaise 2 teaspoons white wine vinegar ¼ teaspoon sugar ⅛ teaspoon garlic powder salt and freshly ground black pepper
Salad: 1 head Romaine, coarse chopped and rinsed 1/2 avocado, cut in pieces 2 hard boiled eggs, grated 1/2 cup shredded purple cabbage 5 slices bacon, cooked and chopped 1/3 cup roasted almonds, chopped or slivered almonds 3/4 cup cherry tomatoes, halved (I added sliced purple onion on my salad)

In a small bowl, mash blue cheese and buttermilk together with a fork until mixture resembles large-curd cottage cheese. Stir in sour cream, mayonnaise, vinegar, sugar, and garlic powder until well blended. Season to taste with salt and pepper.
Note: Whole milk may be used in place of buttermilk for a milder flavor. Dressing may be refrigerated in an air-tight container for up to two weeks.
Salad:
Assemble all ingredients onto two separate salad plates - start with the lettuce, cabbage and avocados, then drizzle on the dressing. After that, add the other ingredients. If you want it to be "deconstructed," then put the bacon and tomatoes each on one side of the plate. |
