"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
1/4 pound pork sausage
2 tablespoons butter
2 – 3 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1-1/4 – 1-1/3 cup whole milk
Warm biscuits

Directions:
Directions:
Step 1: Brown the meat

Using a small skillet, cook the sausage over medium heat until no long pink; drain.

Step 2: Make a roux

Add butter to skillet and heat until it is melted. Add the flour, salt and pepper; cook and stir until incorporated. Add the milk, stirring constantly. Bring to a boil, continuing to stir until the mixture thickens.

Step 3: Serve over warm biscuits

Once the gravy thickens to your desired consistency, serve immediately over biscuits. There are countless ways to make homemade biscuits, but this fluffy, flaky biscuit recipe is a great starting point.
