5 everything bagels* 1 pound fresh pork breakfast sausage - cooked, drained, and cooled 10 ounces sharp cheddar cheese - grated 1 red bell pepper chopped 2 green onions chopped - plus 1 for garnish 7 eggs - lightly beaten 2 1/2 cups half and half 1 1/2 teaspoons dry mustard 1 teaspoon salt 1/2 teaspoon ground black pepper
* I assume that any brand of everything bagels will work, but the recipe used and recommend Dave’s Killer Bread Epic Everything Bagels for this recipe. They feel their flavor and softness are perfect in this dish.

Directions:Since this dish can be prepped the night before, all you need to do in the morning is put it in the oven and brew some coffee. That’s it! There’s no need to wake up before the sun to make breakfast.
Begin by cutting the bagels into 1/2 – 1 inch cubes. Spray the bottom of a 9×13 baking dish with cooking spray, then add in the cubed bagel pieces.
Spread the cooked sausage over the bagels. Then, sprinkle with the cheese, chopped red bell pepper, and green onions. Mix slightly with your hands to combine.
In a large bowl, add the eggs, half and half, dry mustard, salt, and pepper. Whisk to combine. Pour this mixture over the bagels and sausage.
Cover the dish with foil and refrigerate for 8 hours or overnight.
Before baking, preheat your oven to 350 degrees F.
Bake covered until set and lightly golden on top: about 60 minutes. (You can remove the foil for the last 10 minutes of baking for a nice golden top.)
Remove from the oven and allow the casserole to set for about 15 minutes before serving. Sprinkle with chopped green onions to garnish. |
