3 medium size eggplants
Homemade tomato sauce, or really good store bought
1/2 cup grated parmesean
1 bunch fresh parsely
Cooking spray

Directions:
Directions:
Pre-heat oven to 400 degrees. Slice eggplant into 1/4 inch
slices, sprinkle with salt, and drain on paper towels 20-25
minutes. Spray baking sheets with cooking spray and bake
eggplant slices 12 minutes each side. In lasagna pan layer a
thin layer of sauce, cooked eggplant slices and then another
layer of sauce. Sprinkle one half of the cheese, and with
scissors chop parsely over first layer. Repeat with second
layer, cover with extra cheese. Bake 30 minutes at 375
degrees.
