Ingredients: 2 lb. pizza dough 1 cup pizza sauce 1 cup pepperoni ½ cup salami 2 cups shredded mozzarella 1 cup ricotta cheese 2 tbsp. oil ½ cup parmesan cheese

Directions:1. Preheat oven to 475º. Line a baking sheet with parchment paper or spray with oil. 2. Divide the dough into 8 pieces, equally sized. 3. On a lightly floured surface, roll each piece into an 8 inch circle about ¼ inch thick. 4. Spoon pizza sauce in middle of dough, then dot with ricotta and top with pepperoni, salami and shredded mozzarella. 5. Leave the edges clean to allow for sealing the calzone. 6. Gently fold in half and crimp the edges. 7. Transfer to prepared baking sheets, leaving space. Brush tops with oil and sprinkle with parmesan cheese. Cut a small vent on the top of each calzone. 8. Bake for 15 minutes or until golden brown. Allow to cool 5 minutes before cutting. |

Turkey Barbecue Sandwich with Pickles and Slaw |

Ingredients: ¼ cup apple cider vinegar, plus more if needed 2 tsp. sugar 1 tsp. fine sea salt 1 (14oz.) pkg. classic coleslaw ½ cup barbecue sauce bread and butter pickles hot sauce (optional) 12 ounces cooked shredded turkey, warmed up (about 3 cups) Mayonnaise (optional) Hamburg buns

Directions:1. In a small pot, combine vinegar, sugar and salt. Cover pot and heat until sugar dissolves, 1-2 minutes. 2. Place coleslaw in a bowl. Pour hot vinegar mixture over slaw and toss to combine. 3. Cover and let sit. Toss occasionally while you prepare the sandwiches. 4. Pour barbecue sauce into a medium bowl and taste it. If it 's too sweet, add a little vinegar and hot sauce. Toss in turkey and stir until evenly coated. 5. To assemble the sandwiches, spread mayonnaise inside the buns, if you like. Then fill the buns with slaw, pickles and turkey. Serve with more hot sauce on the side, if you like.

Notes: One of JJ's specialties is calzones. Both he and Ali enjoy the flavor-filled "folded pizza". To use leftover turkey Alfred recommends the Turkey Barbecue Sandwich. The coleslaw adds crispness and the pickles add sweetness.
