Cake:

2 c. self-rising flour
2 c. sugar
4 eggs
2 tsp. cinnamon
1 c. canola oil
1 c. buttermilk
3 c. shredded carrots

Icing:

1 pkg. cream cheese, softened
1 stick butter
2 tsp. vanilla
1 lb. XXX (Confectioners) Sugar
1 ¼ c. walnuts

Cake:

1. Preheat oven to 350º.

2. Mix all ingredients except the carrots with a mixer. Once mixed, add the carrots and stir. Evenly divide the batter into 3 pre-greased cake pans. Cook in a preheated oven for 30 minutes.

Icing:

1. Mix butter and cream cheese.
2. Add vanilla and sugar and mix.
3. Finally add walnuts and frost cake.
