4 cups roasted squash
1 yellow onion - chopped
2 Tbsp olive oil
4 cups chicken broth
1 can full fat coconut milk
1/2 tsp salt
1/2 tsp pepper
1 tsp sage, thyme and/or rosemary

Directions:
Directions:
Heat olive oil in sauce pan over medium heat.

Add onions, salt, pepper and herbs, cook until soft, about 6 minutes.

Add roasted butternut squash and chicken broth, simmer for 15-20 minutes.

Add coconut milk and additional salt/pepper to taste.

Using an immersion blender, blend soup until creamy. If you don't have an immersion blender, you can use a standard blender, working in small batches.
