2 med tomatoes, quartered
2 jalapeno peppers, halved & seeded
1 med white onion, cut in 8 wedges
1 red bell pepper, halved & seeded
1 yellow pepper, halved & seeded
2 Tbs olive oil
1 tsp oregano
1 tsp chili powder
1/2 tsp cumin
salt & pepper
1 lb thin chicken cutlets
12 flour tortillas
2 limes ( 1 juiced & 1 cut into 8 wedges,for serving)_
8oz salsa
8oz sour cream
8 oz crumbled cotija cheese
cilantro leaves for serving

Position an oven rack 5 to 6 inches below broiler element & preheat the broiler on high

Sheet pan- add tomatoes, jalapenos, onion & bell peppers drizzle with olive oil, sprinkle with oregano, chili powder, cumin salt & pepper. Toss and coat well. Push to side on baking sheet. Lay chicken flat on the other side & season with salt & pepper.

Broil for 5 min. Flip chicken & vegetables & return to broiler until chicken is cooked through & veggies are softened & charred, about 5 more min.

Wrap tortillas in kitchen paper & heat in microwave - 30 secs.

Shred chicken, spoon roasted veggies into blender with any juices & blend until smooth. Toss 1 cup sauce with chicken. Squeeze the juice of 1 lime over it.
Put the remaining sauce in a bowl to serve on the side.

Serve with extra salsa, sour cream, cheese, lime wedges & cilantro
