chicken thighs (skinless but it calls for skinned so either way)
1 onion
3 cloves garlic
3/4 cup dry white wine
1 can diced tomatoes with juice (28oz)
3/4 cup chicken broth
3 tbsp capers
1 1/2 tsp oregano
1/4 cup basil
You can add olives if you like too.

Directions:
Directions:
dredge chicken in flour with salt and pepper.
In large saucepan Add chicken pieces and sauté just brown. Approx. 5 min per side,.
Remove chicken. Add bell pepper, onion and garlic and sauté over med heat until onion is tender, about 5 minutes. Season with salt and pepper. Add the wine and simmer until reduced by half, about 3 min. Add tomatoes with their juice , broth and capers and oregano. Return chicken to pan and and continue simmering over med low heat until chicken is just cooked through about 30 min. I have also put in roaster in oven at 350 for around 30 min.

Serve over egg noodles or rice or nothing. Have some nice rolls or thick pieces of bread.
