1½ c. egg whites
¼ tsp. salt
1 tsp. cream of tartar
1 c. sifted granulated sugar
1 c. powdered sugar
1 c. sifted cake flour
1 tsp. vanilla or ½ tsp. almond or orange extract

Place empty 10-inch tube pan in hot oven (425º). Beat egg whites with salt and cream of tartar until stiff but not dry. Fold sugar and cake flour together 5 times. Fold into egg white mixture 2 Tbsp. at a time raising spoon with a high upsweep motion. Add flavoring. Remove pan from oven. Pour batter immediately into hot pan. Bake in 425º oven exactly 23 minutes. Remove from oven. Place upside down on make rack. Remove cake when cooled. Frost and eat.
