5 jalepeno peppers
15 cocktail sausages
4 oz cream cheese, at room temp
4 oz extra sharp cheddar (white or orange)
2 sheets frozen puff pastry dough, thawed
1 large egg, whisked

**several string cheese divided into thirds to make cheese bites
**Can also make some with only sausage and cream cheese mixture for less spicy

Directions:
Directions:
Preheat oven to 400 and line 2 baking sheets with parchment paper.
In a medium sized bowl, mix together the cream cheese and cheddar cheese until well-combined.
Cut the tops off of the jalepeno peppers and then cut them in half. Scoop out seeds and membranes and discard them.
Cut each half in half (4-6 strips per pepper).
Take frozen pastry puff and break into the three sections (by the fold lines) and cut into four pieces per third. Place strips on cookie sheet with parchment paper lining.
Crack egg and beat with fork to make egg wash.
Scoop cheese mixture onto each jalepeno slice. Place cocktail sausage on top.
Place cocktail sausage on end of each strip of pastry puff and roll up. Brush some of egg wash on end to seal. Brush tops with remaining egg mixture.
Cook for 25-30 minutes until golden brown and cheese is melted.

**Make some with only cheese (seal ends with pastry puff) or some without jalepeno peppers for less spicy
