2 tablespoons olive oil
2 cloves minced garlic
4 zucchini diced
1 cup corn kernels, frozen, canned, or cut from fresh cob
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
Salt and pepper
Juice of 1 lime
2 tablespoons fresh chopped cilantro
2 tablespoons grated Parmesan, or more to taste

Heat oil in large skillet over med-hi heat. Add garlic stirring frequently for about 1 minute.

Add zucchini, corn, basil, oregano and thyme. Cook, stir occasionally until zucchini is cooked through, about 5 or so minutes. Season with salt and pepper to taste. Stir in lime juice and cilantro.

Sprinkle top with Parmesan cheese and serve.
