9 cups water (approximately)
1 pound or 2 cups beans (black or brown preferred)
2 ham shanks
1 or 2 bends of kielbasa quartered lengthwise and chopped (I use beef Polska)
3 TBSP olive oil
8 bay leaves
8 cloves of garlic
1 large yellow onion coarsely chopped
1/2 tsp ground pepper
1/4 tsp salt
1/4 tsp garlic salt
cumin (optional)
garlic powder (optional)
cheesecloth

Directions:
Directions:
- Prepare beans by sorting to remove any possible stones or odd beans, then rinse remaining beans in colander. Put beans in pressure cooker and add water, make sure water is 1.5 to 2 knuckles above the beans.
- Wrap ham shanks in cheesecloth to keep bones from hiding in beans.
- Combine the rest of ingredients in pressure cooker and bring up to pressure.
- Cook for 1 hour once pressure is up. Remove from heat.
- Allow to sit for 10 minutes while pressurized.
- Release pressure and remove ham shanks and bay leaves.
- De-bone ham shanks and return meat to pressure cooker, mixing well.
- Check flavor, and adjust if needed.
- Serve over rice, and if possible sprinkled with Farofa..

Adjust the water to your personal preference. 9 cups creates a more liquid mixture.
