Zucchini Parmesean Recipe

2-3 medium zucchini, sliced to approximately ¼ thick
2-3 tablespoons olive oil
1-2 cups dry italian seasoned breadcrumbs
¾ cup grated parmesean cheese (divided)
8 ounces shredded mozzarella cheese
3/4 cups of your favorite marinara sauce

Directions:

1. Preheat oven to 425º
2. Combine zucchini slices and olive oil in large bowl. Stir to coat.
3. Combine breadcrumbs and ¼ cup of grated parmesean cheese in a shallow dish.
4. Coat zucchini slices with cheese and breadcrumb mixture and place them on a foil lined sheet pan coated with cooking spray. Spray the top of the slices with cooking spray too.
5. Cook zucchini slices until golden brown, approximately 10 minutes, then flip and roast another 10 minutes or so.
6. Reduce oven heat to 375º
7. Spread a thin layer of marinara sauce over bottom of a 9x9 inch baking dish, or whatever size you have.
8. Place one layer of "breaded" zucchine slices on top of sauce and coat with more sauce and a generous layer of both cheeses.
9. Repeat layers until you use up all of the zucchini.
10. Cover with aluminum foil and bake approximately 20 minutes. Remove foil and bake another 10 minutes or until top layer of cheese is melted and browned.
