3 cups soda cracker crumbs (large)
1/2 cup melted butter (use more if cracker crumbs seem dry)
4 pints raw oysters (whole Eastern oysters, or Pacific oysters – cut up)
salt and pepper, to taste
1 cup diced celery
4 tbsp. minced fresh parsley
2/3 cup liquid (1/3 cup oyster liquid; 1/3 cup half-and-half)

Directions:
Directions:
Drain oysters; reserve liquid and set aside. Check each oyster by hand for shell pieces.

Mix cracker crumbs with melted butter. Spread 1/3 of the crumbs in a baking dish.

Arrange over crumbs in two layers: oysters, salt & pepper, celery and parsley.

Pour oyster liquid over (see measurements above). Top with remaining crumbs.

Bake @ 450 degrees for 30 minutes.

(If doubling the recipe, bake for 45-60 minutes).

Check halfway through cooking – loosely place aluminum foil on top to keep from getting too brown
